Wow. My last post was almost 35 pounds and over three months ago. Way to be a slacker Andrea! What has happened the reader's digest condensed version. I have completed the Weight Watchers 5K, Utah Valley Half Marathon, We Run for Freedom 10K, First Annual South Jordan Half Marathon and I have the Deseret News 10K in the morning. Not including the walks to Weight Watchers, around my neighborhood and wherever else I find myself. On the MS front I had my six month check with my neuro and MRI in May. Everything was fabulous. The copaxone (injectable medication) that I have been on for a year now has helped a lesion that was very concerning... disappear!! Wahoo. I still have plenty of damage but NO active lesions as of the May scan. I only clarify because I have begun to have some muscle spasms/spasity issues in my left hamstring. Also the migraines are back. OH WELL. We must do our best to ignore what we can or we end up dwelling on the bad and forgetting all the good. Weight wise I am definitely on the right track, however, as my goal weight draws within reach I have slacked on tracking and making sure I get my good health guidelines checked off. That is what brings me back to the blog.... I have resolved to track completely for this week... including the 24th of July weekend!! I am amazed at the foods that I thought I knew the points for but didn't and what nutrients I was missing after only one day.
Favorite food for the summer: Frozen Grapes (mixed green and red or all red). My recipe is simple buy 12 pounds of grapes (Sam's Club or wherever they are on sale). Remove from stems and wash (my spaghetti colander works great for this) and package in 'snack' size ziploc bags (the ones that are half sandwich size). They hold one cup of grapes (8 oz.) which gives you 36 bags of grapes for your freezer. Now at this time I have to admit that prep time takes about half an hour. For my family they last a week at most... but there is a lot less snacking on junk that is for sure!!
